Chocolate Orange Truffles
Chocolate Orange Truffles are a wonderful snack. They are easy to make and super tasty. They are also healthy! My long-term readers know that I am following the Autoimmune Protocol diet to help heal my body. I covered this in a previous post, and you can read it here.
I found this lovely recipe on Pinterest. It was created by Michele over at Thriving on Paleo. She has a bunch of tasty recipes! I highly recommend following her on Pinterest or visiting her website.
Chocolate Orange Truffles
- 10 pitted soft dates
- 1 orange (zest and 2 TBSP Juice)
- 1 TBSP Avocado or Coconut Oil
- 3 TBSP Cocoa Powder (or carob powder) +some for dusting
Directions:
- Toss your dates into a food processor or blender and blend until it begins to get smooth. But what if your dates aren’t soft? No problem. Take your dates and place them in a bowl of hot water for 10 minutes.
- Toss in the orange zest, orange juice, oil and cocoa or carob powder. Blend until smooth and well mixed. As a side note, I didn’t have an orange, so I used a couple of Cuties.
3. Once its well blended, start scooping. I used a 2 TBSP scoop.
4. Dust each scoop or ball with cocoa powder or carob powder. Just a heads up, they will be sticky.
5. Once dusted, you can store in the fridge for two weeks or in the freezer for longer.
I really enjoyed these Truffles. Next time I make them, I would use a little extra orange. I have also seen other recipes that include collagen powder to bring in some protein. I would like to try to that as well.
